Originally conceived as a small microbakery, Brotique quickly outgrew its initial space due to its popularity. The next logical step was to translate the concept to a larger scale. The new Brotique brings bakery and dining into one open space. Architecture becomes a backdrop for the craft of bread-making – supporting processes, enhancing interaction and allowing the essence of the place to unfold naturally. Rammed earth, hot-rolled steel and oak create a reduced, natural material palette, while folding windows blur the boundary between inside and outside.
